would a front brake hub from a CB 400 hawk T... 78 through 79 vintage serve for my TS 250 for speed. It has 36 holes total on the hub and it is on eBay right now thanks Michael

I would try it, but they aren't common over here in the UK so can't really say. spindle dia needs to be the same or have interchangeable bearings etc.
I've laced odd rims onto mz hubs before so the other way round shouldn't be too much of a problem.

when riding old bmw's years ago i liked drum brakes in foul weather the sloppy snow and slush
will freeze the pads to the disk on a disk brake and there you set...
till the wrecker truck hauls you home to thaw out in the shed
been there done that
if its a cold weather daily driver stick with a drum brake
and watch the slush build up around the front chain sprocket
it freezes = broken engine case on a friends honda 750
ouch $$$

the slush would break the chain case!. That is hardcore riding! while I didn't think about the spindle diameter
thank you for the heads up.
I would prefer the drum brake. is there a excellent drum brake that is recommended for the TS 250 ?

Well the standard suggestion is the TLS from the Honda CB175 or CB250 K4 ( UK designations) but they are getting rare nowadays, and people are starting to restore the bikes ( yeah, I know. I mean who would want to waste money restoring a CB175.... said by the man who restores MZ
)
Myself I would just get the original MZ brake relined with soft compound and get a heavy duty brake cable made up. Properly adjusted it works pretty well.

I like your advice because I could keep the bike original. Make sense to me and is all do-able.
How do you designate or find soft brake shoes?
spend the most money?
I have no problem spending money on brakes because as you know stopping is important.
And I always shy away from cheap brake parts.

In the UK I use a company called Saftek
http://www.saftek.co.uk/ . They strip the old lining off clean the shoes then bond on a new lining and skim to suit. I'm sure there are similar companies in the states. From memory they charged me around £30. Money well spent.

There are Ferodo brake shoes available.They are far better than the original GDR brake shoes.

Lucas produces also brake shoes for MZ.They are quite the same than Ferodo...
So if they fit, you can use them.
