Skorpion Carb Problem

Here are the symptoms, if I open up the throttle quickly when the bike is at idle the engine cuts out. If I roll it on slowly there is no problem. If the choke is on there is no problem. Any thoughts?

sounds like my rt125 when there's a load of water and ethanol in the float bowl
all mixed together the rednecks here refer to it as EPA CRUD
one of the cures is to run real gasoline if there is a station in your area that serves it

may be something else but my rt125 sure does run nice on the real gas

This symptom can also be caused by a partially blocked main jet. I have seen this on BMW's many times

Other than these 2 reasons described here - and if it happens at more spots than just idle - like you're rolling along @ say 1/4 throttle and you whack it open and it falls on its face ... roll on it slowly and it runs like a champ - if that is the case, its a sign that your slide is comming up too fast.
Since this bike has that weird twin carb setup, I'd not know which one is the likely culprit ... on bikes that dont have this setup, I'd close 1 hole @ the bottom of the 1 slide and try it ... if it still is happening, I'd partially close the other hole and try it ... usually it would be too slow by then ...
